Thanksgiving Traditions

My absolute favorite Thanksgiving tradition doesn’t happen until the Sunday after Thanksgiving. After the feast, after the shopping and after the football that is when the magic happens. My mother-in-law makes her famous Turkey Flauta. They are so good that there have been Thanksgivings that have required an extra turkey just so that there would be enough leftovers for the Flautas. If you are not from South Texas, a flauta is basically a deep fried stuffed tortilla served with guacamole, sour cream, and pico de gallo. Here is the basic recipe – it takes a little practice but is definitely worth the effort!

The first step is to cut your leftover turkey off the bone and into small pieces. Sauté turkey in oil with diced onions, salt, pepper and garlic to taste.

Once your turkey is brown mix in tomato sauce and let it simmer to thicken.

Warm corn tortillas to soften then fill them with your turkey mixture. Secure with toothpicks to hold in place then drop into hot oil until golden brown. This is the only tricky part. If the toothpicks don’t hold you could have a little mess.

There you have it! Way better than any turkey sandwich anywhere! You may have to make this a tradition of your own.
